stuffed peppers


News flash - I made dinner the other night using a new recipe! As usual it was a simple dish. It turned out pretty well, although I think the flavoring could be amped up. Do you have a favorite recipe for stuffed peppers?

Here's a link to the clean eating recipe I used. The only change I made was to add brown rice to the stuffing mixture. Will use fresh garlic in the saute next time and will parboil the peppers before baking them.

Now I see this clean eating recipe for stuffed peppers that seems like it would be tastier. Oh well, next time.

Once upon a time, I could not eat turkey.
But I've had it twice now, after losing weight.
So.... maybe I should give it a try with these stuffed peppers.... and yes - they are very pretty!

It looks very pretty! I wish I liked peppers more than I do. So far, I'm just managing to add a few to sandwiches or salads. I doubt I'll graduate to eating a 1/2 a pepper anytime soon. Maybe I could have the stuffing with a few pepper slices on top. :)
